I am trying to add title at the beginning and end of my project, when I click the "T" in the edit screen, it pulls up a picture from the project into the video monitor section. I want these at the start and end and I am affraid of messing up the project.

Grab the video content and slide it to the right to make room for title text. Open your "title" tab and select "standard". In the window to the right choose a style of title you want and drag the icon into the space on your working screen you just created. Now enter the text you want and you are done.
Repeat the process at the end of the vid for the end credit. Experiment with different text styles and effect. You will not hurt your video unless you save before you have what you want. If you do screw up the video, reload the original and try again.
