Wondering how/why I have only 40ish samples from 5 or so genres when I purchased maker ultimate? Am I misising something?

This would suggest you are running the trial version, which has limited features and content, and have not activated the program with the serial number, beginning with P3-, you would have received in the purchase confirmation email.
On activation and first run did you install all the additional content which is available on activation? If not the option to do so is under Help, Install additional content.
If you have received a voucher code then you need to redeem it here to get a serial number.
