  Using a Grabby Terratec, and composite video input I can only see and record B&W video. Sound works fine. I have tried a number of sources, all with the same result. Any good ideas ?

  I believe the answer would be yes...to a point. The "point" being you can't alter the note sequences within the basic soundpool samples themselves.  You can sometimes edit these to suit your needs with some effort (cut, trim, copy, paste, etc.)
