MEP Recording Tutorial

Can anyone point me to a tutorial on how to record video with MEP? Preferably one that would recommend, or describe, all the numerous options available for resolution, frame rate, ratio, compression, etc.

I've searched for HOURS and not found anything on how to record.

I'm hoping to be able to record camera, screen and audio at the same time. Hopefully in something near 1080p quality.
