Why my MIDI EDITOR don't make sound? Only sometimes

And what is the Plugin Dialog for?

The window with the keyboard apears (Synth Track #) and

I can only play with it.

I can't record what I play, can't edit anything...so what is it for?

I also have that piano that appears...but  I can only play with it...

Aren't those instruments for recording and editing my songs?
