Not sure what you're talking about. There is no need to "open up...tracks" as they are there (probably 32) be default.

Do you have MEP basic, Plus or Premium?

Did you try scrolling down to see more tracks?

You can add more tracks by clicking on the + button in the track header or by increasing the number in the Project Settings?

If you don't know about any of this, I suggest that you watch my tutorials on Basic Editing:
